The past few weeks, was just the right time to be in Central America; this country, the size of Colorado has 28 volcanoes and 14 are actives. One of the treasured destinations in Nicaragua is the Ometepe Island where the famous twin volcanoes are located; Vulcan Concepcion and Maderas.
The weather is perfect for hiking and enjoying the peaceful scenery of the lakes and craters, and certainly discovering the authentic local cuisines.

The country Nicaragua is rich with tropical birds, vociferous howler monkeys, high pitch cicadas, pin size frogs, and countless of marvelous native species so much worth seeing.

One of the typical traditional dish of the country was papusa; a tamale-like wrapped with banana leaf, generally stuffed with pork or chicken with cornmeal, sliced onion and pepper, that is just simply comforting even in this snowy cold weather here in New York.
